Super Quick and Easy Egg, Dairy, Peanut and Tree Nut Free Cake from Boxed Mix
Sometimes I really don't want the hassle of having to make sure I have enough flour, sugar, cocoa powder, etc. to make a cake. I know that boxed cake mixes call for egg, but I thought to myself There are so many egg substitutes out there, couldn't I do that with a boxed cake mix? So I went to the store and searched through the cake mixes to find one that wasn't cross contaminated or ran the risk of being cross contaminated with dairy, eggs, peanuts or tree nuts.
I finally found one.
**Please keep in mind, this could be different where you live so ALWAYS make sure to check the ingredient label**
Duncan Hines. There were several that only had the allergen: Wheat. Which, luckily isn't what we are avoiding. That was the only allergen listed though. I picked up a box of Devil's Food mix and went on my way.
To do this is super simple:
Follow the directions on the back of the box except for the eggs. Instead of eggs, the replacement I used was 1 tbsp flax + 3 tbsp water for each egg that the mix called for. That's it. I mixed it up and baked it and it turned out just fine!
I've also heard of omitting the water, eggs or egg substitute and vegetable oil completely and using a can of soda instead! I, personally haven't tried that one yet!
