Dairy and Egg Free Dinner Rolls
We love bread around here but once again, sometimes it is very hard to find a simple recipe that doesn't need eggs or milk.
What you will need:
Large mixing bowl
Rubber spatula
Kitchen towel
Baking sheet
Vegetable or soy based cooking spray
Something to cut the dough (I use a pizza cutter)
1 1/2 cups Luke warm water
1 tablespoon (or a package) of instant yeast
2 tablespoons granulated sugar
2 tablespoons softened vegan butter
4 loose cups (don't pack it, you'll get too much that way) flour
1/4 teaspoon salt
Optional (for topping):
2-3 tablespoons melted vegan butter
Salt
Directions:
Go ahead and preheat the oven to 350 degrees F. (You'll need the heat from the oven to help the dough rise)
Combine water, yeast and sugar. Let sit for about 5 minutes or until frothy.
Add 2 tablespoons of softened vegan butter, salt, and 2 cups of flour.
Mix until combined.
Add the remaining flour and mix well.
Knead the dough for a few minutes. (I stopped once it started sticking to my hands too much)
Cover the dough using a kitchen towel and let rise in a warm area (I set mine on top of the preheated oven) for about 20 minutes.
Punch the dough down and turn it onto a lightly floured surface.
Knead it a little more and roll it into a ball.
Flatten it out a bit, not very thin, but so it's wide enough to easily cut into rolls.
Cut your dough into equal portions.
Roll each section into a ball and place onto lightly greased baking sheet
