Simple Dairy and Egg Free Skillet Chocolate Chip Cookie
My husband and I were craving cookies and I had some vegan chocolate chips lying around so I decided to make a giant chocolate chip cookie!

What you will need:
Large mixing bowl
Rubber spatula
Large cast iron skillet
Non-butter based Crisco
2 Cups of all purpose flour
2 Teaspoons of baking powder
1/2 Teaspoon of salt
1 Teaspoon of cinnamon (Optional)
1 Cup of sugar
1/2 Cup of oil (vegetable or canola)
1 Teaspoon of vanilla or vanilla extract
3 Teaspoons of brown sugar
1/2 Cup of water
1 Cup vegan chocolate chips (I used Enjoy Life brand)
Directions:
Preheat the oven to 350 degrees F
Mix everything together in the bowl
If it's too dry, add a little more water at a time (a teaspoon at a time is a good start)
Take a paper towel and rub some of the Crisco all over the bottom and sides of the pan
Put mixture into your skillet and spread around with the spatula until it covers the entire bottom of the skillet. Make sure it's even
Bake for 25-30 minutes or until golden and a toothpick comes out dry
Cut it up, serve and enjoy!
