Vegan Royal Icing
So I made my sugar cookies for Easter and had some piping bags and tips (which you do not need to decorate with! All you need are sandwich bags!) and wanted to try them out! So here is a royal icing recipe and directions for consistency!
What you will need:
Note: The directions will be enough for one color only, you will need to make several full batches for multiple colors!
1 Cup powdered sugar (I cannot believe i didn't catch this until now! Powdered sugar!! That's what I get for typing with an energetic 2 year old. So sorry!)
2 Teaspoons water(This will give you a thick consistency, I recommend making one batch like this and keeping it around to thicken up your other batches if they become too runny) or 3 teaspoons water for flood consistency
2 Teaspoons light corn syrup
1/2 Teaspoon of clear imitation vanilla or any clear extract that you'd want to flavor with
Bowl for mixing
Rubber spatula
Butter knife for checking consistency
Piping bags or sandwich bags
Toothpicks
Optional: piping tips (a size 1 tip is best, I think I used a size 3 writing tip because it's what I had and it was almost too big so be careful)
Directions:
Stir together water and powdered sugar (the water will not mix with all of the powdered sugar most likely and that's okay, it will come together with the other ingredients)
Add corn syrup and vanilla until the icing is smooth and glossy
Run your butter knife straight through the middle of your bowl. It should look something like this.

After you have done this, wait 15 seconds. After 15 seconds, your icing should look like this.
This means it is the right consistency for flooding. If your icing does not do this and the line is still very clear, add small amounts of water at a time. Just a few drops at a time, stir each time and check again.
Once it is at the right consistency, add your coloring and mix well.
Place your icing bag in a tall glass and fold over the edges of the glass. (Insert the tip first if you're using one)
If you are not using a tip, remember to cut small first because if you need to you can always make the hole bigger, but if you make it too big you can't go back!
Pour your colored icing into the piping bag. You'll need one bowl of icing per color and per bag. It takes a lot.

Line your cookie with whichever color you choose just going around the edges, make sure to pick up your bag a bit so it's an even line.
Once you've outlined your cookie, begin filling it in quickly with your base color it's okay to drag the tip or the end of the bag on the cookie this time.
Once filled, even it out with a toothpick.
If you want your next colors to blend in, add them immediately while the icing is still wet. If not, wait until it is dry and add your next color.

Just have fun with it! I'm not the best decorator by any means especially since I just started out! But it is all about enjoying yourself!
