Vegan Sugar Cookies
Every holiday I try to make something, weather it's fudge, Oreo truffles, cupcakes, cookies, you get the point! Anyway, this year for Easter I decided to try some sugar cookies!
What you will need:
1 Cup softened butter (You can use a vegan butter like Earthbalance, but I've found Blue Bonnet Light contains no dairy and is way cheaper so I used that, it's softer as well!)
1/2 Cup sugar
1/2 Cup powdered sugar
1/4 Cup applesauce
2 Cups flour
1/2 Teaspoon baking soda
1/2 Teaspoon cream of tartar (If you're new to recipes excluding milk, don't be afraid of cream of tartar like I was at first, there is no dairy as it is actually a byproduct of wine manufacturing)
1 Teaspoon vanilla
Extra flour
A bowl for mixing
An electric mixer (You could probably do without but creaming butter and sugar is hard without one)
Cooking Spray
Cookie sheet
Optional: cookie cutters
Directions:
Preheat oven to 325 degrees F
Spray cookie sheet with cooking spray
Cream together the butter and sugar
Add apple sauce and vanilla and mix well
Add the remainder of the ingredients and mix well
This dough will be very, very sticky, add a little bit of flour at a time and combine it with your hands until the dough is no longer sticky
If you are using cookie cutters roll your dough out pretty thin, and cut out your cookies (If you don't roll them out thin enough they will be like biscuits)
If you are not using a cookie cutter roll them into walnut sized balls and press down lightly on them with the bottom of a floured flat glass or roll them out, your preference
Lay your cookies on the greased cookie sheet
Bake for 10-12 minutes until they start to seem golden
Remove from oven and cool
When they are cool you can eat them as is or decorate them! I decorated mine using Royal Icing which I will be posting ingredients for and instructions on how to do this!
